Zucchini & Halloumi Croquettes



5 Zucchini  grated
160g Halloumi grated
2 tsp Sumac
¼ Cup fresh parsley
¼ Cup fresh Mint
1 Egg whisked
½ Cup Self Raising Flour
½ Cup Panko crumbs
½ Cup flour





Method:

Using a mixer grate up your Zucchini and Halloumi, you can do them together.
Once all grated tip into a fairly large bowl.

Add the Sumac and chop up your Parsley and Mint and add them into the bowl.  I use scissors to chop them up and straight in.

Mix in your whisked Egg

Add in your SR Flour a little at a time till its all combined.

Leave to rest a few minutes whilst you mix together the breadcrumbs and flour. I used Panko crumbs (Japanese bread crumbs) but you can use any dried breadcrumbs.

I used my hands to make little ball croquettes. You can do this easier if you use wet hands. You can also use spoons.

Roll them in crumbs before transferring to fry pan.  I used olive oil spray to cook but you can use oil if you want.   Turning till they are golden all over.

You can make these ahead and just warm them through later in the oven on a tray covered with aluminium foil.
